Ideally, would like to see both options still available. Sometimes instructors want to know when individual items are available. Let instructors choose what they'd prefer (or if they want both).

I agree with Anne. Another useful course email template would be a count of items still being processed vs. items currently available. Ideally something like:
“Your course reserve requests for [Course] are being processed. There are still [count of items unavailable] items in processing…”

Would like to be able to send emails from course records to instructors that include the language: “Your course reserve requests for [Course] have been completed, items will be available on [Date/Time]…”
